Delilah, the Art Deco-themed supper club from Los Angeles-based h.wood Group, now has an executive chef in place at Wynn Las Vegas. Joshua Smith, the former executive chef at Bardot Brasserie at Aria, takes over the Roaring ’20s-inspired supper club with West Hollywood roots. The restaurant features an upper-level bar for 40 at the entrance, a cascading staircase to the restaurant and entertainment, and bottle service options.
L.A.’s h.wood Group — which runs The Nice Guy, Peppermint Club, Poppy, Petite Taqueria, and Bootsy Bellows — brings the dinner with a party to the space that formerly housed Alex, the two Michelin-starred French restaurant from chef Alex Stratta that closed in 2011.
Servers wearing white jacket tuxedos and flapper dresses and a band playing on stage set the entertainment vibe of the space designed by Todd-Avery Lenahan, Wynn’s president and chief creative officer. Delilah planned to open last May, but held off to await loosened restrictions during the pandemic.
Smith left Bardot Brasserie, the French restaurant from Michael Mina at Aria, last year. His resume includes stops at the Mina Group’s Seablue, the former seafood restaurant at the MGM Grand where Pub 1842 sits now. Smith, a Las Vegas native, returned to the city when Bardot Brasserie opened in 2015 after a stint as a divisional executive chef for Lettuce Entertain You, where he worked with chef Matthew Kirkley at the now closed L20 in Chicago. Smith worked at the former Anisette Brasserie in Santa Monica and Church & State Bistro in Los Angeles as well as at Estiatorio Milos, formerly at the Cosmopolitan of Las Vegas.
