Estiatorio Milos reinvents itself with its new location at the Venetian. The Greek restaurant from Costas Spiliadis offers fish flown in from the Mediterranean, a new fruit and vegetable market, a raw bar, a yogurt room, and Greek wines.
The 10-year Strip veteran departed the Cosmopolitan of Las Vegas last year to move its Mediterranean-inspired seafood menu to the Venetian’s restaurant row. Work started on the new space in August, bolstered by a $10 million budget in estimated construction costs alone. Milos takes over the 13,624 square feet of shuttered seafood restaurant Aquaknox, with a maximum occupancy of 434 inside.
Diners can pick their proteins from the fish market and select fresh fruits and vegetables at a produce market. A raw bar focuses on whole fish sashimi using the day’s fresh catch along with crudo and tartare preparations such as Greek ceviche and a tasting of raw bar dishes. The bar highlights Greek wines by the glass. Whole fish in sea salt, tuna, lobster, salmon, and octopus make the menu, along with the Milos Special, a tower of fried paper-thin zucchini and eggplant with tzatziki at the base and within.
The Milos website says the restaurant’s popular prix-fixe lunch returns soon with starter options such as seasonal oysters, a Greek meze plate with raw vegetables and grilled pita, or grilled octopus to start, and entree choices such as dorade royale, Faroe Islands wild salmon, grilled organic chicken cooked on a skewer with mushrooms, and more. Dessert options include Greek yogurt or karydopita served with ice cream.
The wide-open space features an open kitchen, bar, and private dining rooms. Architect Alain Carle uses stone, wood, and Pentelikon marble.
